There may have been a gauntlet… and it may or may not have been thrown at dinner on Friday evening.
The challenge: My cousin and I to make dinner Saturday night.
Ok, simple, right? Wrong. Not when the critic is a classically trained chef.
Back story on my cooking: If I’m emotionally in a bad place, I can’t cook to save my life.
Case and point, the box mix of brownies I destroyed a week earlier. (Though, all relatives swear that they were amazing, they totally weren’t.)
We shopped and planned the following menu:
Ginger lime chicken pitas
Homemade guacamole and chips
Salad
And the last minute add of red beans and rice
All in all, it was a decent meal – nothing outstanding, but fun to do actually.
I topped off the evening with from scratch chocolate chip cookies and French vanilla ice cream. If nothing else, I think that redeemed the meal. (I was in a much better mental state for baking after the concert on Friday so we didn’t have another baking debacle.)
Sungglie pjs and tv movies completed my Saturday night and that was all right with me!
